Not to worry, I can cover that too! Working in restaurants over the years, I’ve learned to adapt to the ever growing list of food allergies and dietary restrictions. I have a plethora of Gluten Free recipes I have perfected over the years as well as Vegan! This goes across the board- small pastries, cakes, plated desserts and breads. Get to Know Me!

Hi! I’m Shelby Mitchell, your future pastry chef! I obtained an Associates in Pâtisserie and Baking from Le Cordon Bleu in Scottsdale, Arizona before then moving to Antibes, France, to begin my career on the French Riviera in 2016. For two years I trained under Michelin-starred chefs. I moved back to the states and began working for Waldorf Astoria resorts and specialized in restaurant service, high volume banquets and high tea service. In 2019, I moved to San Antonio, Texas, to become part of the growing food scene. After working with local restaurants, I joined Mixtli, a progressive Mexican tasting menu spot- where I helped open their new location, building a pastry program that would turn heads. 4 years later we earned the city’s first Michelin star and shortly there after, myself and my partner found our own little piece of heaven, here in Wimberley!
